PIZZA chef Riccardo Moretti, 21, of Kemps Creek, knows more than a few tricks when it comes to kneading dough.
He is also a pizza acrobat and will be one of the first to represent Australia overseas next year.
He is one of the 10 members of the Pizza Connection’s Australian national team.
The team comprises participants from Melbourne and Sydney competing in different categories, including acrobatics, desert, gluten-free and traditional pizzas.
